Apple pancakes recipe
When I was I kid my father made the apple fritters typical of northern Italy. Here is the recipe for apple fritters, delicious, which I prefer to prepare without eggs because they absorb less oil. I serve them with a ginger and maple syrup as my friend and colleague Rosanna Passione taught me how to do.
2 organic apples, 100 g of 00 flour, 1organic lemon, 1 C. sugar, 100 ml of milk( also soy milk), half a teaspoon of cream of tartar, cinnamon q.b. if you like it, a pinch of salt, sunflower or peanut oil.
First, wash and cut the apples into slices, not too thin. With organic apples it is also good to use the peel.
Grate the lemon and put it aside. Then squeeze the lemon juice on the apples to keep them from browning.
In a bowl, mix the flour with the cream of tartar, sugar, cinnamon, lemon rind, a pinch of salt and then add the milk until you get a creamy batter.
While the oil is heating for frying, dust the apples with a little flour so as to make sure that they take the batter very well.
Fry the apples until they are a beautiful golden colour and leave to cool on paper towels.
